Sweet Potato and Veggie Quinoa Bowl

Wowwww this is probably my favorite bowl I've ever made. I am a huge huge sweet potato fan and I think that's what just put this over the edge!!! Super simple steps and assembly!! A must make!
Prep time: 35-40 min
Servings: 2
Ingredients:
- 1 box of quinoa / rice of your choice (cooked) , I used a quinoa/brown rice blend found at Lucky's market
- 1 sweet potato (peeled and cubed)
- 1/2 medium cucumber (sliced)
- 1/2 cup red onion (diced)
- 1/2 cup cherry tomatoes (halved)
- 1/2 avocado
- 1/3 cup feta
- 1 lemon
- 2 tbsp olive oil
- 1 tsp black pepper
- 1 tsp salt
- 1 tsp garlic powder
- 1/2 tsp cayenne pepper
- 1/2 tsp red pepper flakes
- @aldiusa Cucumber Dill Greek Yogurt Ranch
Directions:
1. Peel and chop sweet potato into 1 inch cubes. Place on oven pan and drizzle with olive oil and spices. Bake on 425 F for 28-35 min. Checking to see if fork tender.
2. Cook quinoa or rice according to box directions.
3. Chop/prep veggies.
Assembly:
1. Place quinoa/rice in bowl first, then sweet potato, then add veggies. Top with feta cheese and squeeze lemon over top and drizzle with desired amount of dressing. ENJOY! :)
