Go-To Granola!

Okay, sooo I think I've figured out a pretty dang good granola recipe! I've been using this recipe for months now and it hasn't failed me yet. It's very easy to change a few ingredients or throw in different add-ins like chocolate chips, nuts, peanut butter chips, coconut, dried fruit, etc. Whatever you have in your cabinet works! I've also found a few key steps in the granola baking process that produce the best clumps and chunks! I don't know about you all, but the big chunks of granola are always my very favorite! Also, I know everybody loves adding granola to their yogurt, but I am a big fan of eating granola as cereal with your choice of milk and fruit! I love eating mine with oat milk and blueberries!
Ingredients:
2 cups oats
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp chia seeds (optional)
1/4 cup nuts & or seeds (I used peanuts & sunflower seeds)
1/4 cup olive oil
1/4 cup honey
1/2 tsp vanilla
2 Tbsp natural peanut butter- (if you are using a regular peanut butter like Jif, heat it up in the microwave for a bit to make it a melted consistency, this will help it cover the oats better- I use a natural peanut butter because it already has this consistency).
Optional add-ins: chocolate chips, coconut flakes, peanut butter chips, dried fruit, etc.
Directions:
1. Set oven to 350 F. Line baking sheet with parchment paper.
2. In a large bowl, mix oats, salt, cinnamon, chia seeds, and nuts.
3. Add in honey, olive oil, vanilla, and peanut butter. Mix well.
4. Add to pan. Press down granola with spatula. Bake 10 min.
5. Mix up granola then press down again with the back of a spatula. (Press hard! This helps create larger chunks!👍🏼). Bake another 3-5 min or until golden brown. (Stay close to kitchen at this point, if it smells like it’s burning then yup trust ur sniffer, it probably is )
6. Let sit for at least 45 min! (This is crucial for the granola to harden & create chunks) Add in chocolate chips or other add-ins at this point! Break into pieces.
7. NOM! :)
